The noodle-making process at Ramen Factory 42 is no secret. You can actually watch members of the kitchen team whip up batches of fresh noodles, which they toss into a broth that’s also made daily from scratch, in-house. Just choose whether you want whole-wheat or green tea noodles, and then watch the staff get to work.
Since Ramen Factory 42 debuted four weeks ago, it has begun to introduce locals to specialty ramen soups like the signature Hakata tonkotsu ramen. This soup showcases shrimp, scallops, and clams swimming in a pork bone broth, topped with pork chasyu, a sweet egg, bamboo shoots, green onion, mushrooms, ginger, garlic flakes, and dried seaweed. You can also skip the pork and try the Kagawa special shoyu ramen with a base of chicken bone broth, a blend of seafood, and beef teriyaki and veggies on top.
