The chef at Copa Kitchen & Bar borrows culinary ideas from Spain and other parts of the world to create a menu of shareable bites like flatbreads, skewers, and sliders. Since Copa made its grand debut in Arlington a few weeks ago, and it’s already generating buzz among visitors.
Order a round of tapas to share with your dining companions, starting with the popular baby back ribs skewer dressed in barbecue sauce. Add skewers of lamb or lemon-herb chicken, roasted eggplant or stewed chickpeas, or flatbreads topped with roasted veggies or swordfish. Spicy chili and blood orange wings, pork belly sliders, and fried manchego cheese bites are among the other options on the menu. If you’re still hungry after the small plates, enjoy a larger sandwich like the pork loin with roasted peppers and spicy ancho pepper aioli.
